Santa Caterina
This less-common, hardy varietal from Italy has an open, leggy canopy. The oblong, freestone fruit has a high flesh-to-stone ratio; a phased ripening pattern lends it to home table olive production. It is not overly vigorous and is self-incompatible. An exact pollinator is unknown, though it seems to produce successfully when interplanted with other Italian varietals.
