Mission
Named after the Missions where it was originally planted by priests, this varietal is the closest California has to a native olive tree. The incredible array of genotypes found throughout the state make pinning down particular characteristics difficult for the Mission cultivar. In general, Mission has erect growth and larger-sized, freestone fruit appropriate for high quality oil and table olive production. The flavor characteristics of Mission's oil change
